No-Churn Peanut Butter Lovers Frozen Treat

Who needs to cool off? 

It’s the summer and some areas of the world are dang hot. Here in North Carolina, it’s in the 90s with high humidity. (Welcome to the south, right?) 

What does all that mean?

We need a frozen treat for the occasion!

 
 

After I created the recipe, I realized the Crystal Shores series should have an ice cream shop. Little Lemon Bakery will keep us happy in the interim. The owner, Molly, sells ice cream sandwiches with her special cookies.

I guess Defend My Heart (Book Three) needs to mention these yummy ice cream sandwiches. I bet Angie would choose one of those ice cream sandwiches with Molly’s chocolate macaron cookie.

And now I want ice cream sandwiches.

I made this recipe versatile.

Which means it can be keto friendly/low carb if you choose.  

Now let’s discuss calling the recipe a frozen treat and not ice cream.

Since I decided to not use my ice cream maker. Instead, I whipped the cream with a hand mixer. There's no need to churn the cream in this recipe. The frozen treat may harden a little more than ice cream, so you may need to leave it out to soften before serving.

The recipe is easy to make. Super delicious. Plus, if you don’t own an ice cream maker, then you’re in luck.

No-Churn Peanut Butter Lovers Frozen Treat

Recipe by Terra Kelly

Prep: 15-25 minutes

Freeze: 3 hours or overnight

Makes: 4-6 servings

Ingredients

2 cups heavy whipping cream

8 oz cream cheese, softened

½ cup erythritol (or favorite sugar)

¼ cup Swerve brown sugar, packed (or favorite brown sugar)

¼ tsp xanthan gum (or cornstarch)

¼ tsp salt

1 cup peanut butter

¼ cup unsweetened cocoa powder

1 cup chocolate chips

½ cup lightly salted peanuts, roughly chopped

Directions

In a medium bowl, add heavy whipping cream and with a hand mixer whip until soft peaks form (about 2-3 minutes).

In another medium bowl, add cream cheese, peanut butter, sugar, xanthan gum, and salt. Mix ingredients with a hand mixer until it is smooth. Add prepared whipped cream into the bowl and continue using the mixer until ingredients are well incorporated (about 1-2 minutes, don’t over mix).

In whipped cream mixture, add chocolate chips and peanuts. Stir together ingredients, then add to a freezer safe dish and place in the freezer.

Stir ingredients every 15 minutes for the first hour. Then let it freeze for about two hours or overnight for best results.

Enjoy with extra peanut butter!

Author Note: I used natural peanut butter for the recipe. Natural peanut butter needs to be stirred because the oil is separated from the peanut butter when you first open it. Once it’s stirred the peanut butter is loose and easy to mix into the whipped cream mixture.

Note: The recipe is called frozen treat because it does not use an ice cream maker to churn the ingredients together. Once it’s completely frozen, it will be harder to scoop out. Make sure to pull the frozen treat out at least one hour (or longer) before you want to enjoy the dessert.
