Creamy Sausage Tomato Soup

This was supposed to be a simple recipe I just quickly threw together. Then I took a bite and knew you would love it, too.

The recipe is easy to prepare, and it’s packed full of flavor in every single spoonful.

Oh, and the best thing about this recipe? You can mix and match the ingredients to make it work with your pallet. Perfect, right?

When Shawna and Danny first started dating, he made an amazing chicken tortilla soup.

Shawna still raves about that recipe, and actually, Danny makes it for her almost every single month now.

You definitely don’t need to use sausage. Chicken or even extra veggies would be amazing with all the delicious ingredients. Have fun with the recipe.

At the time I’m writing this lovely recipe, it’s officially soup season. Now, for me personally, soup season is all year long.

Creamy Sausage Tomato Soup

Recipe by Terra Kelly

Prep: 15-20 minutes

Cook: 30-40 minutes

Makes: 6-8 servings

Ingredients

1 lb ground spicy sausage, browned

3-4 cloves garlic, minced

1 small onion (1/2 cup), diced

2 medium carrots, diced

3 stalks of celery, diced

4 oz cream cheese

1 cup heavy cream (or favorite milk)

32 oz tomato soup

15 oz sliced mushrooms

15 oz diced spicy tomatoes

1 tsp Italian seasoning

Salt and Pepper

Optional

Red pepper flakes

Hot sauce

Directions

Brown sausage in soup pot over medium-high heat. Remove browned sausage from pan and set aside.

Leave all the remnants of the browned sausage in the pan, add onions, carrots, celery, and garlic. Let the vegetables cook for about 5 minutes. You want the onions to be translucent and the vegetables to be partially cooked (they don’t need to be soft).

Next, add the cream cheese and let the cream cheese melt and mix into the vegetables.

Now add the rest of the ingredients, heavy cream, tomato soup, mushrooms, diced tomatoes, Italian seasoning, salt and pepper. Let the ingredients cook together. Bring the soup to a boil and then move it down to medium to low heat and let it simmer for at least 30 minutes (you can let it cook longer to bring the ingredients together a little bit more).

Time to enjoy!

You can top your soup with sour cream, cheese, hot sauce, and/or chopped fresh parsley. Get creative with YOUR bowl of soup.

Note: This soup can be easily interchanged. You can remove the protein or switch to a different protein.
