Alex Winters from Find My Heart (The Winters Family Book Two) encouraged me to grill the chicken for the recipe. He is our grill master, so I guess he probably knows what he’s talking about.
Hint: the grilled flavor was pretty fantastic in the soup.
I have a feeling Alyssa and Lexi will start pressuring him to grill the chicken every time he makes homemade chicken noodle soup for them.
I know there are three parts to this series, but trust me, you’ll want to make all three.
This was my first time making homemade noodles. It was crazy, I had so much fun making them. I know, I know, they do take a little bit to prepare…BUT there is just something about thick cut noodles in a wonderful bowl of homemade soup. Pure happiness.

Warm, Cozy Chicken Noodle Soup

Prep: 10-15 minutes
Cook: 25-30 minutes
Serves: 4-6
Ingredients
6 cups chicken bone broth (see recipe here)
3 cups roasted chicken, cut into bite-size pieces
2 large carrots, sliced
3 large stalks of celery, sliced
2 small onions, diced
3 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Homemade herbed noodles (see recipe here)
Directions
For the chicken: you could buy premade roasted chicken, roast a whole chicken in the oven, OR grill a whole chicken (you decide).
For this recipe, we grilled a whole chicken. Then we let it cool and removed the chicken from the bone.

To prepare the chicken soup: In a large stockpot on medium heat, add carrots, celery, onions, and garlic. Let them cook for about 5-10 minutes or until they have started to soften.
Next, add bone broth, chicken, Italian seasoning, salt, and pepper. Bring soup to a boil and then move to simmer for about 15-20 minutes.

In the last 3-5 minutes of cooking your soup, you will add your homemade noodles. You don’t want to overcook the noodles. An indicator the noodles are cooked through, they will float to the top.
Now it’s time to enjoy a bowl of soup!
