Almond Flour Chocolate Chip Donuts with Strawberry Glaze

We’re still celebrating donut month with this easy to make and super delicious recipe.

Trust me AND my hubby when we say one won’t be enough…oh, and make some extra glaze.

 
 

If you’ve been following me for a while then you know I try to stick to the keto diet, but I know the recipes in my books can’t all be keto. It is fun to create a few treats that ANYONE could enjoy. Plus, there are no rules with this recipe. You can make them with your favorite sugar, chocolate, and jam. Have fun switching up the ingredients to make them perfect for YOU!

The almond flour and almond extract really provide a fun flavor combination with the chocolate and strawberry. If you don’t have almond extract, then just use vanilla (easy peasy switch).

Okay, we always chat about which characters would love to make this recipe. Let’s be honest, all of them. I mean, who doesn’t love donuts?

BUT, I decided to enjoy the Month Of Donuts thanks to Nova from My Single Dad (Man Card Book Three). She made donuts and delivered them to different cafes, and coffee shops. Of course, she never made keto-friendly donuts, but I tried to channel her when I created this specific recipe. I think she would love to deliver this recipe to all her customers.

Almond Flour Chocolate Chip Donuts with Strawberry Glaze

Cook: 14 minutes

Makes: 8-12 Donuts

Ingredients

1½ cup almond flour

½ cup coconut flour

½ cup brown sugar (see notes on sugar)

1 Tbsp baking powder

¼ tsp salt

½ cup butter

½ cup half and half (or favorite milk)

4 eggs

1 tsp almond extract

2 tsp cinnamon

1/8 tsp nutmeg

½ cup chocolate chips (see notes on chocolate chips)

Glaze:

1 cup powdered sugar (see notes on sugar)

3-4 Tbsp half and half (or favorite milk)

3-4 Tbsp strawberry jam (see notes on jam)

Directions

Preheat the oven to 350 degrees Fahrenheit. Spray donut pan with cooking spray (if you don’t have a donut pan, you could use a muffin pan and fill each cup ½ full.)

In a small saucepan on medium heat, melt butter and then let it cool.

In a medium bowl, add brown sugar, melted butter, half and half, eggs, and almond extract. Mix together well.

In a small bowl, add almond flour, coconut flour, baking powder, salt, cinnamon, and nutmeg. Mix together well.

Mix wet and dry ingredients together. Add chocolate chips.

In a prepared pan, add batter. Bake for 12-14 minutes depending on the oven. The donuts should be golden brown. Check with a toothpick to ensure the center is cooked through.

Note: To keep this recipe keto-friendly, I used Swerve brown sugar. For the glaze, I used Swerve confectioners’ sugar. You can use your favorite sugar.

For the jam, I used sugar-free jam that is made with Splenda. You can use your favorite jam.

For the chocolate chips, I used Lily’s semi-sweet chocolate chips (Stevia is used in the chocolate). You can use your favorite chocolate chips.
