Chocolate Peanut Butter Vegan Donuts

It’s time for donuts!

We all need one, especially when they are slathered in the delicious glaze.

In My Single Dad (Man Card Book Three), Nova made some irresistible donuts. Now we need to recreate a few of those treats and throw in a couple of extra recipes.

 
 

Confession time: I made this first recipe not just for us but also for a dear friend who is vegan. We had a lunch date planned and I wanted to share the donuts. It’s more fun when I can share my treats.

 Personally, I think Nova would love to sell these at the coffee shop with Zander. They were delicious, healthier options, and well, no guilt involved…especially if you decide to eat more than one donut (which is totally okay!).

 The donuts are baked, so you can use a pretty donut pan. BUT, don’t feel pressured to run out and buy a pretty new kitchen toy. If you want to use what you already have in the house you could use a muffin pan. The recipe will still work and they’ll still taste amazing.

If you’re not a peanut butter or chocolate fan when it comes to donuts. Hang tight, during “The Month of Donuts” there will be a donut for EVERYONE. Hint: Yeasted donuts are on the list, too. OMG!

 I know we usually have a way to make a recipe gluten free or keto friendly. Instead, what I’m going to do is offer a gluten free donut this month. We’ll mix things up. Then what you can do is take the flavors from the vegan donut and use them in the gluten free donut. Basically, there is no set recipe. Have fun and get creative!

Chocolate Peanut Butter Vegan Donuts

Recipe by Terra Kelly

Prep: 10-15 minutes

Cook: 12-15 minutes

Makes: 8 donuts

Ingredients

1 ½ cup all-purpose flour

3/4 cup sugar

2 tsp baking powder

½ tsp salt

¾ cup almond cashew chocolate milk (or favorite milk)

1 tsp vanilla extract

1/3 cup peanut butter (or favorite nut butter)

Glaze for Donuts

2 cups powdered sugar

3 Tbsp Cacao powder

4-6 Tbsp coffee (or water)

Directions

Preheat oven to 350 degrees Fahrenheit. Spray pan with coconut oil cooking spray or grease with vegan butter.

In a medium bowl, add sugar, milk, vanilla extract, and nut butter. Mix well.

In small bowl, add flour, baking powder, and salt. Mix well.

Mix wet and dry ingredients and mix well. Don’t over mix the batter.

You can add the batter to your prepared pan with a spoon or use a piping bag to ensure all sides are even.

Bake in preheated oven for 12-15 minutes depending on oven. They should be golden brown. Check with toothpick to ensure the center is cooked through. Let the donuts cool before adding the glaze.

For the glaze, add powdered sugar, cacao powder, and coffee. Mix well.

To add the glaze to the donuts, carefully dip top of donut into glaze. Or you can use a fork and add glaze to all sides. You decide.

After adding the glaze let them sit for at least thirty minutes to one hour, then enjoy as many as you want.
