Cinnamon Fortune Cookies

This recipe was created because of my food bucket list.
The cookie seemed hard to make, but actually they’re really fun to whip up.
Plus, now you can have lots of fortune cookies in the comfort of your own home.
We always discuss which character would make the recipe on the weekly blog and sometimes the recipe WAS made by the character. This time though, it was me and my food bucket list that inspired the recipe.
BUT if we think about our characters, I bet Kris and Millie from My Sugar Cookie (Man Card Book 15) would have fun creating the little cookie.
They’re both top chefs and love to compete. This cookie can be challenging which is exactly something they love. They HAVE won several food championships after all.
I’ve watched this cookie being prepared on so many cooking shows. The way they carefully spread each cookie out on the sheet pan, I seriously thought it was too delicate to work with.
BUT I’m happy to report, it’s an easy recipe to mix up.
The hardest part (and I stress this in the recipe) forming the cookie while it’s still damn hot.
I made the recipe twice because I tested out an ingredient for the first round. After making the recipe twice and ending up with close to 70 cookies, the heat doesn’t get any easier.
That’s why in the recipe I mention using a hot pad to help with folding the cookie. I needed something to help ease the intensity of the heat on my fingertips.
I want to be fully honest with you always. BUT all that being said, I would definitely make this recipe again and again. We really loved them. Plus, you could easily mix up which spices you add to give them different flavor enhancements.
Oh, speaking of flavor enhancements- I added the bourbon for an added caramel flavor. You could use vanilla extract if you want instead. I love baking with booze, but I know not everyone does.

Cinnamon Fortune Cookies
Recipe by Terra Kelly
Prep: 15-20 minutes
Cook: 4-5 minutes
Makes: 32-34 cookies
Ingredients
3 large egg whites
¾ cup sugar
½ cup butter, melted
1 Tbsp bourbon (Optional. Or use water)
2 ¼ Tbsp water
1 cup all-purpose flour
1 tsp cinnamon
Directions
Preheat oven to 375 degrees Fahrenheit. Use silpat or parchment paper on a sheet pan.
In a small saucepan over medium heat, melt the butter. Let it cool completely.
In a medium bowl with your hand mixer, mix sugar and egg whites for about 2 minutes. They will be frothy in appearance. Next, add melted butter and mix for another minute. Then add bourbon, water, all-purpose flour, and cinnamon. Mix for another minute or until everything is well incorporated.
Important note: Only add two or three cookies to the sheet pan. Once they are cooked, they harden fast. So you want to have minimal cookies to work with at one time.
Add about a half tablespoon of batter on the prepared sheet pan and use the bottom of the spoon to move the batter around in a circular motion until the batter is spread out very thin and in a circle.
Bake the cookies four and half minutes. You want a golden brown appearance around the edges. It’s important to note, the cook time will depend on your oven. (It took me a few tries to find the perfect time.)
Be ready for this next step: (NOTE: This step is very hot on the fingertips.) The moment you pull them out of the oven you have to work quick (that’s why you only want to add two or three at a time to the sheet pan). Use a spatula to ensure they are not stuck to the pan. Next, use a hot pad and set one cookie on the center to help carefully bring the edges together (you fold the cookie but only the outer edges). Then use a mug and while holding each end of the cookie with your fingers push the center of the cookie down onto the edge of the mug until each end touches. Now you have formed the fortune cookie. To help keep its shape, sit them in a muffin pan and let them cool. They cool and get hard fast, so this part has to be quick.
Note: This cookie is not hard to make, but you just have to be prepared to move fast through each step after it’s baked.
