The Gigantic Mug Cake

It’s a mug cake that is the size of your head! Okay, that’s not really true but it is huge.

The recipe is made in the microwave and super easy to make. Even better, since you use a 20 oz coffee mug it’s like enjoying a huge slice of cake.

The recipe is versatile and it would be fun to make with your kids.

 
 

We had to take a little road trip up to Crystal Shores, Michigan for this recipe inspiration.

What makes her unique? She knows some people are not big on baking so it’s exciting to find ideas for them. Everyone should have a chance to dig their spoon or fork into something delicious.

Okay, here’s the truth about this recipe. Are you ready?

Hubby and I had gotten rid of our microwave in 2004. Then we moved into this new house and there was a microwave here. Since we rent, I couldn’t touch it.

It wasn’t going anywhere and my baker mind was curious.

The mug cakes became all the rage several years ago, but we had never had one. So I started trying recipes and figuring out what I liked. My biggest issue, the recipes were made for small coffee mugs (8 0z) and only like three bites. Definitely not enough.

It took about a month and several tries but I finally found a good ingredient combo that felt right, looked like cake when cooked, and packed full of flavor.

There’s something special here, too. This recipe only uses brown sugar. When I used all the brown sugar, it actually gave the cake a more defined flavor. So I feel this is a brown sugar cake and yes, it will be used in future recipes that require an oven.

The Gigantic Mug Cake

Inspired by Molly from Little Lemon Bakery in Crystal Shores series

Prep: 5-10 minutes

Cook: 2 minutes

Makes: 20 oz Coffee Mug of Cake

Ingredients

5 Tbsp salted butter

½ cup milk (use your favorite)

1 Tbsp canola oil (or your choice)

1 ½ tsp vanilla extract

½ cup brown sugar, packed (I used Swerve brown sugar)

½ cup all-purpose flour sifted

1 ½ tsp baking powder sifted

¼ tsp salt

Optional- ¼ cup chocolate chips (I used Lily’s semi-sweet chips)

Directions

Note: This recipe is made in the microwave, and it uses a 20 oz coffee mug. If you have a smaller mug, you could divide this recipe for your mugs.

In a coffee mug, add butter and melt in the microwave for 20-30 seconds.

In a coffee mug with melted butter, whisk (I used a fork) the brown sugar until it thickens. Then add in the milk, vanilla, and oil. Whisk until it’s incorporated and looks thick in appearance.

In a separate bowl, sift the flour and baking powder.

Add the flour, baking powder, and salt to the wet ingredients and stir (but don’t over stir).

The batter should be loose but not runny. If it appears dry or too thick, you can add a small amount of milk (a little goes a long way).

Microwave on high for 2 minutes. (If the top appears runny or the batter still looks raw, microwave for an additional 10-20 seconds.)

Top with sprinkles or chocolate chips and enjoy!
