This recipe was first made several years ago. Since it was first made it’s taken on huge transformation. This new addition has a delicious smoky flavor. Oh, and it literally took me less than thirty minutes to prepare.

This specific recipe states it serves 6-8 people. That is not 100% true. It depends on the size of your bowl and how you want to use the recipe. If you enjoy as a soup then yes, it may be 6-8 people. The recipe is large and having extra is worth it… trust me.

Roasted Red Pepper Tomato Soup

Cook: 15-20 minutes

Serves: 6-8 (varies)

Ingredients

2 (28 oz can) peeled plum tomatoes

1 (28 oz can) tomato sauce

1 (6 oz can) tomato paste

2 (16 oz jars) roasted red peppers, drained

(½ cup) one small onion, diced

(2 tsp) two cloves of garlic, diced

1 Tbsp Herb de Provence

2 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

Directions

In a small pan, sauté onions and garlic on medium heat. Cook onions until they are translucent. Once onions and garlic are cooked, turn off stove and add tomato paste. Mix well.

Note: You will want to puree the plum tomatoes and roasted red peppers with the tomato sauce. You can first puree them in a food processor or you can add the ingredients to a soup pot and use an immersion hand blender.

In a large soup pot, add peeled plum tomatoes, tomato sauce, and roasted red peppers. With immersion hand blender puree the ingredients. Next, add the cooked onions, garlic and tomato paste to soup pot. Mix well.

Cook ingredients together in medium heat. For the last step, add Herb de Provence, smoked paprika, chili powder, salt and pepper. Let the soup cook through for about 15-20 minutes.

How to serve: This is a simple soup that is a base for several meals.

Ways to enjoy:

As is- pour in a bowl and devour.

Top with sour cream and shredded cheese.

Top with a cooked egg and cheese.

Serve alongside grilled cheese sandwich.

Use over pasta.

Could be used for your Shakshuka recipe.

…the possibilities are endless.

How to store: Keep in refrigerator for up to a week or freeze half of the recipe for later use.

Note: I first made this recipe several years ago when I had my food blog. I created this recipe for a company and used their specific products. For the updated recipe I kept with the fun soup idea but mixed it up a bit. This recipe is smoky and pairs well with just about anything.
