Berry Burst Chocolate Chia Seed Pudding
We’re ending the month on a super delicious recipe that is oh so healthy. If you haven’t used chia seeds before then keep reading because I’m about to change all that.
This recipe takes minutes to make so it’s the perfect treat after a meal or for your afternoon snack.
Are you ready to mix up some Berry Burst Chocolate Chia Seed Pudding?
I first made a chia seed pudding with my first food blog. The flavors used in the original recipe were raspberry almond. I even used almond extract instead of vanilla extract. Guess what that means? You can get creative and use your favorite flavor combo.
The almond cashew milk was at Trader Joe’s health food store. Confession: It had been sitting in my cupboard for way too long. Then I tried it in this recipe and the recipe we’ll enjoy next week. Hint: next week’s recipe involves donuts. WOOHOO!
OH I almost forgot…y’all need to find the milk. It’s really freaking good in a recipe AND in a tall glass.
In every blog, we discuss which character would make the recipe. When I was mixing up the pudding, Shawna and Danny from Dance Into Love (The Winters Family Book Four) popped in my mind. They already have a few healthy recipes in their book, so this would definitely go on their menu.
Also, all the fighters in the Fight It out Series would love this when cutting before a fight. It provides an element of sweet without all the guilt. Let’s dive into the recipe!

Berry Burst Chocolate Chia Seed Pudding
Recipe by Terra Kelly
Prep: 10-15 minutes
Inactive: 2-4 hours
Serves: 4
Ingredients
2 cups almond cashew chocolate milk
2/3 cup chia seeds
1/3 cup sugar
1 cup strawberries, diced
½ cup blueberries
1 tsp vanilla
Directions
In a medium bowl, add almond cashew chocolate milk, chia seeds, sugar, and vanilla. Dice strawberries, add strawberries and blueberries. Mix well.
Leave in a medium bowl or portion out into four different bowls.
Let sit in the refrigerator for at least two hours or overnight until pudding is thickened.
Serve with more strawberries and blueberries.

Note: You can use any milk for the recipe. Also, to make it diabetic and keto friendly, you can use a sugar substitute like Swerve, Stevia, or Erythritol. Mix up the berries you use and have fun with the recipe.
